On May 30, countries around the world marked the third annual International Day of the Potato — and Potatoes USA was proud to take part in the global celebration of America’s favorite vegetable.
In the days leading up to the celebration, Potatoes USA used its Potato Goodness social media platforms to spotlight the potato’s place at tables around the world. Central to the effort were traditional dishes which featured potatoes from around the globe, spanning poutine in Canada, steak and potato tacos in Mexico, suan la tu dou si (sour and spicy shredded potato stir fry) in China, potato fufu in Nigeria, and lomo saltado (a stir-fry of steak, onions, tomatoes, and fries) in Peru — a nod to the potato’s Andean birthplace.
Shared as recipe videos across social and digital channels, the dishes celebrated the potato as a culturally significant food while inspiring new ways to enjoy spuds at home.

What is the International Day of the Potato?
Proclaimed by the United Nations (UN) General Assembly in 2023, the International Day of the Potato is the first international day dedicated to a major food crop. Facilitated by the UN’s Food and Agriculture Organization (FAO), the day is designed to raise awareness of the potato’s contributions to food security and society, and to encourage collaboration across the global potato sector.
This year’s theme — “Where Potatoes Grow, Livelihoods Flourish” — recognized the role potatoes play in supporting farmers and communities from the Americas to Africa and beyond.
The day is coordinated internationally by the FAO in collaboration with the World Potato Congress (WPC), with Potatoes USA representing the United States alongside groups from other nations and regions like South America, South Africa, Australia, Canada, and Europe.
The World Potato Congress also recognized Potatoes USA’s efforts to promote global potato dishes in a planning webinar for International Day of the Potato earlier in May.
