University of Minnesota Students Get Schooled on Potatoes

May 7, 2025

An estimated 1,000+ University of Minnesota students attended a two-day campus event organized by Potatoes USA to sample potatoes, learn how spuds fuel athletic performance, and share their passion for produce. The goal was to get Gen Z thinking about the benefits of potatoes and how to use them to fuel their days.

The first day of the performance-themed event took place outside the Minneapolis campus student recreation center. Students sampled potatoes as pre- or post-workout fuel, participated in our “Quick Fry By” Strava run route, took home Team Potato swag, and learned all about the nutritional benefits of potatoes. Potato Goodness gained more than 200 social media followers at the event, and we grew the Team Potato community of everyday athletes.

On the second day,  the College of Food, Agricultural, and Natural Resource Sciences (CFANS) on the university’s St. Paul campus hosted a potato-themed end-of-semester party. One hundred and fifty CFANS students, who are working toward degrees in agriculture, nutrition, and various other specialties, ate potatoes and joined Team Potato to continue sharing their love for potatoes after the party concluded.
