Global Chefs Experience the U.S. Potato Advantage During Reverse Trade Mission

Thirty-one chefs from across the globe joined Potatoes USA’s recent Reverse Trade Mission, gaining firsthand insight into the innovation, technology, and research that drive the world-class quality of U.S. potatoes.

The delegation, representing nine international U.S. potato markets, spent the week of October 11–18 exploring the U.S. potato supply chain from farm to table. The group included culinary professionals responsible for menu development and product innovation at leading restaurant and foodservice organizations in their respective countries.

“Our mission is to strengthen demand for U.S. potatoes internationally,” said Marisa Stein, Potatoes USA Global Marketing Director. “Activities such as this Reverse Trade Mission are impactful in increasing international U.S. potato volume, sales, and usage. When chefs experience the depth of expertise, research, and care that go into U.S. potatoes, they return home inspired to incorporate more U.S. potato products into their menus.”

Connecting Innovation, Research, and Culinary Inspiration

Throughout the week, participants visited a potato farm and learned about frozen potato processing, dehydrated potato production, and cold chain management, providing a comprehensive view of the U.S. potato supply chain. They also visited a research and extension center, where they learned how ongoing research and innovation across the U.S. potato industry contribute to improvements in quality, yield, and sustainability—key factors in maintaining U.S. potatoes’ global reputation for consistency and excellence. The mission concluded in Chicago, where chefs participated in culinary innovation sessions designed to spark new menu ideas and showcase the versatility of U.S. potatoes across cuisines.

For many participants, the experience was eye-opening. “Coming here and seeing all the studies they do to make potatoes as renowned as they are—it’s incredible,” said Domingo Deobaldia, a chef from Panama who owns a fried chicken restaurant chain. “It solidifies my confidence that the product I use is top quality and developed to meet my needs.”

Driving Long-Term Global Growth

Potatoes USA hosts Reverse Trade Missions annually, alternating between groups of international chefs and importers or distributors in foodservice and retail.

The Reverse Trade Missions serve as a cornerstone of Potatoes USA’s global marketing strategy—fostering stronger connections with international partners, deepening understanding of U.S. potato quality and reliability, and driving measurable increases in usage across key markets.

“This experience leaves a lasting impression on participants,” Stein added. “They return to their home markets with new knowledge, confidence, and enthusiasm for U.S. potatoes—and that ultimately translates into greater global demand for our industry.”
