After our first Speedy Spud took the Dallas Half Marathon by storm in December, we’re excited to announce our next tuber-loving runner ready to race in a custom-made potato suit! Ainsley Chapman is a full-time engineer studying for her master’s degree, so she’s no stranger to fueling her brain and body with potatoes. She’ll compete in the Salt Lake City Half Marathon on Saturday, April 26, decked out in the Speedy Spud costume to demonstrate the performance power of potatoes.
