The objective of this study is to measure the potato volume data for both fresh and processed potatoes during 2018 in the United States foodservice marketplace.

Highlights:

Potatoes consistently rank among the top dishes in foodservice, accounting for 12.3 billion pounds in 2018. All those potatoes cost over $8 billion.

Frozen potatoes make up the largest share at 59% followed by fresh with 33% and chips, dehydrated and refrigerated potatoes, which all held 3% of the total market.
