Plant-based food startups to retail and foodservice brands showcased their wares at the 2024 Summer Fancy Food Show in New York; here are three trendy, creative ways people are transforming and elevating America’s favorite vegetable.
1. Potato-Based Milk Alternative
A Swedish food brand has made waves with its milk alternative made from potatoes. It’s marketed as an “everyday great-tasting plant-based drink for coffee and tea, to mix with your cereal or just drink by the glass. It’s also great for cooking and baking.” It’s currently sold in Sweden, Ireland and the U.K.

2. Fry Ice Cream Pops
Inspired by a summertime classic—dipping fries in a milkshake—one food brand has launched fry ice cream pops. The limited-edition treat was made to appeal to consumers craving sweet and salty snacks, a category that Food Dive reports has posted 12% compound annual growth during the last four years and is currently valued at $1.7 billion. The pops include a vanilla oat milk frozen base in a chocolate fudge shell rolled in crispy fries.

3. Premium Potato Chips
The Summer Fancy Food Show also saw the debut of some novel chip flavors. There were Spanish flavors like Manchego cheese and Iberian ham, as well as other less traditional varieties like white truffle, fried egg and foie gras. Unconventional chip flavors have taken off in recent years, with several popular brands launching unusual varieties like white chocolate, seaweed, cucumber, grilled cheese and tomato soup, maple bacon, pecan pie and Southern biscuits and gravy.
